In Cooking with Artists, her recurring series on Magazine, she invites artists to share recipes from their lives and reflect on the role of food in their art, heritage, community, and education.
Join us for a live edition of Cooking with Artists with Mina and special guest Caledonia Curry, the artist also known as Swoon. To cook alongside Mina as she prepares Curry’s recipe for her mom’s cast-iron skillet cornbread, you’ll need the following:
3/4 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup sugar (raw, unprocessed, or brown)
3 teaspoons of baking powder
1 teaspoon salt
1 cup of half and half
2 eggs (well-beaten)
4 tablespoons butter (melted)
1 jalapeño thinly diced
1 cup cooked (or canned) corn kernels
1 1/2 cups grated sharp cheddar cheese
